Iron Goddess of Mercy (Tie Guan Yin)
This is the most famous Chinese oolong tea coming from Anxi Mountains in Fujian Province. This tea features a captivating floral and toasted nuts aroma, silky texture, and an intense flavour lightly astringent with a prolonged aftertaste. These attributes have earned this tea a marvellous reputation among tea connoisseurs.

Description
To make Iron Goddess of Mercy oolong tea, the tea master hand-rolls the leaves into uneven balls. At the end of the manufacturing process, the leaves turn jade green. The oxidation is medium at 25-40%. When infused, the rolls unfurl beautifully in the pot. The resulting intense amber liquor gives an orchid-like scent and a wonderful aftertaste.
You can brew the leaves multiple times. Add hotter water or step for longer with each extra brew to better extract the flavour.
This Iron Goddess of Mercy comes from the autumn harvest, which gives it a stronger aroma and a more buttery character.
