Yellow teas are made in limited quantity these days. That is due to the specific skills and long time required to make them. Only China still makes them in the provinces of Anhui, Hunan and Sichuan.
Yellow teas closely resemble green teas in appearance. They are made like green teas but heated at a lower temperature. After a short wither, the leaves are panned and heaped (fermented) twice for 1-2 days, after which they are dried and sorted.
The liquor has a pleasant aroma, silky texture, slightly sweet taste and a smooth finish. Compared to green tea, yellow tea tastes less vegetal and less grassy due to the fermentation it undergoes.
Brew them at 80-85°C for 3-4 minutes and serve them plain.
