White teas are the least processed of the six categories because they are only air-dried. They are made mainly in China – mostly Fujian Province – usually from the spring harvest. Due to the minimal processing of the youngest leaves, these teas are one of the healthiest types.
White teas have a soft and sweet taste. The liquor is clean, pale amber colour and with a smooth texture. If you prefer a stronger taste, you can find that in a White Peony rather than in a Silver Needle. The two are the most popular white teas.
This type of teas can be aged (5-6 years) to obtain a richer, mellower and sweeter flavour. For proper ageing, the teas need to be stored in a dark place, at room temperature, low humidity and in an air-tight jar.
Brew them at 75-90°C for 3-5 minutes depending on how leafy they are and the strength of taste you desire.
You should serve them plain and alone, although you could pair them with berries, stone fruits, or sweets.
